I recently realized I was simply eating leftovers for breakfast. It didn't happen everyday but enough to be noticed. It didn't matter what it was, pizza, stir fry, curried chicken, you name it, if it was in the fridge it was fair game for breakfast. I would pour coffee, heat up my leftovers and breakfast would be served. For real, real. Since breakfast is the most important meal of the day I decided to make a change and make sure breakfast was healthy and nutritious. Enter the smoothies. I don't like smoothies because I actually like chewing my food. Also, how does one put bacon and fried chicken in a smoothie? (JOKING!)
I reached out to my girlfriend for smoothie recipes and she sent me a few ideas. I modified the recipes, mt Tropical Vegan Fruit Smoothies is one such modification.
Vegan Fruit Smoothie
- 1 cup coconut milk
- 1/2 cup mango chunks (I had fresh mangoes, so yummy)
- 1/2 cup raspberries
- 2 tablespoons steel cup oats
- 1/2 banana
- 1 tablespoon almond butter
The first time I made this it was very grainy. This confirmed for me that I needed a new blender but I was not gonna let a blender prevent my greatness, so, the next time I soaked the oats in the coconut milk overnight to soften the oats and make it easier to blend. Next, I dumped all ingredients in the blender and blended until smooth. Perfection!
